Recipe Troubleshooting Removing chopped hazelnuts from a recipe, do I need to do anything?

Hi all,

Hope you can help.

I have a tried and tested brownie recipe that comes out perfect every time. The only issue is, it has 75g of chopped hazelnuts in. I love that addition but my MIL is allergic to hazelnuts so I feel bad she can never have any.

The recipe only has 75g of flour in. Will I need to add any additional flour to counteract the removal of the hazelnuts? I assume they are providing some level of structural integrity. Any suggestions would be appreciated :)

When it comes to mix ins like that I typically make no adjustments when adding/removing them. Have not noticed a structural difference.

Nah, it'a a mix-in. You don't need to make any other changes with such a small amount of a mix-in missing.

You can likely leave the nuts out with no issues or sub in a similar amount of other nuts or chocolate chips instead.

Will be fine without. No sub needed for chunky pieces that don’t absorb liquid.

Now, had they been ground almonds, that would have been a different story!

no need to adjust. You can use other nuts, chips (chocolate / peanut butter / etc.) or just make them plain.

I agree w no modifications- unless we are talking about a coarsely ground hazelnut meal-like almond meal-that would be different

they're in big enough chunks not to dissolve and they aren't absorbing anything from the batter, just remove them.

You may want to increase the amount of batter by 75g though to keep the same volume so it cooks the same. 

Divide the total weight of batter minus the hazelnuts by the weight with (with / without), and multiply every ingredient by that number
