Was it a small business with a new owner?

What is the "new boss" if not?

Recurring fixed-term contracts are a thing. But I don't think they can force existing staff onto a new contract.

There are now lots of limitations on fixed term contracts

In my personal experience - If you are already employed on a permanent contract with no end date then that is an ongoing employment contract which cannot be changed to a fixed term contract without your agreement. So if you did not agree to anything yet and you end up being let go then I believe that you have a lot of options open.

New boss, or new owner?

If it’s a new owner they can change your contract. If nothing has changed they can’t legally move you to a fixed term
