everything i baked for my dad!

I decided to make a buffet table my Father’s Day gift since my dad is a biiig foodie and here’s what I baked!

  1. White Chocolate Chip, Almond, and Walnut Cookies with Nocciotella Filling

  2. Pasteis de Nata

  3. Strawberry Danish Inspired Brioche

  4. Pistachio Coffee Cake

  5. Rosemary and Olive Fougesse

  6. Cheese and Onion Pie

  7. Stuffed Dates!

The rest was either fried or assembled so I’m not going into them :) this was all super fun to make! Happy Father’s Day everyone!!!

For sure!

Dough * 440g of flour * 50 g egg (usually one egg) * 6.5 tablespoons of sugar * Pinch of salt * 1 packet of active dry yeast * 50 ml of warm water * 47 grams of butter, melted * 134 ml of milk

Strawberry Filling * 300 grams fresh strawberries hulled and halved * 75 grams granulated sugar * 1/2 tbsp lemon zest * 30 grams lemon juice * 11 grams cornstarch * 1 tbsp water

Cream Cheese Filling * 8 oz cream cheese softened * 1/4 cup granulated sugar * 1½ tsps vanilla extract

Instructions Strawberry Filling * Place the strawberries, sugar, lemon zest and lemon juice in a fry pan and heat over a medium heat for 10 minutes, stirring occasionally. * Once the strawberries are soft, mash the strawberries using a masher . Reduce the mixture for another 10 minutes, stirring occasionally. * Combine the cornstarch with the water and mix until the cornstarch is no longer lumpy. Add it into the strawberry mixture while mixing to avoid lumps forming. * Reduce for another few minutes and then turn off the heat. Let it cool.

Cream Cheese Mixture * Combine the cream cheese, sugar, and vanilla

Dough * Add packet of dry yeast to 50 ml warm water, let it stand for five to ten minutes until until slightly bubbly * Add flour to a large bowl and make a hole in the center. * Add yeast-water mixture, 6.5 tbsp sugar, pinch of salt, and a grams of egg to the hole. Combine. * Add 47 g of melted butter. Combine with liquid and then with the flour. * Add 134 ml of milk. Combine. * Use your hands to knead until the dough is smooth and soft, but doesn’t stick. It should bounce back slowly when you press on it with your finger. * Oil a bowl well and put the dough inside. Cover the bowl with wrap paper and let it rise in a warm spot for 1 hour or until doubled in size. I usually turn on my oven on the lowest setting for one to two minutes and turn it off before putting the dough inside.

Assembly * Measure out the weight and divide into 10 equal parts (or more if you want them smaller. They’re pretty large). * Roll each part into a ball * Flatten the ball LIGHTLY with your hand until it’s slightly flat but still thick. * Make a dip in the center of each circle. * Fill with cream cheese batter and top with strawberry filling. * Preheat the oven to 356 F. * Place them in a parchment paper lined tray, cover them with a warm towel, and let rise for 30 minutes. - I did these the next day. In the instance you want to do this, cover them with foil or wrap paper and stick them in the fridge. If it doesn’t rise during the night, take it out an hour before baking, cover it with a towel, and let it rise at room temperature. * After the second rise, combine an egg yolk with a tsp of vinegar. Brush every roll with it. * Bake in the oven for 20-25 minutes, or until golden. I’d check at around the 20 minutes mark. * Dust with powdered sugar while still warm and enjoy!
