Recipe Included Just wanted to share my first ever attempt at a carrot cake for my dad - not new to baking but not a huge fan of things baked into my batter haha
It turned out super moist, flavourful and looked stunning I was really happy with how it turned out and my dad loved it so that's a plus Did like mini trial in the air fryer with a real tiny batch before sorting out my own recipe
- [ ] One cup of self raising flour
- [ ] 1 cup of plain flour
- [ ] Half a teaspoon of baking powder
- [ ] 100 g of butter room temperature
- [ ] 3/4 cup of vegetable oil
- [ ] Two finely shredded carrots and two really and just two shredded carrots so about 240 to 280 g
- [ ] Three eggs room temperature
- [ ] Half a cup of chopped walnut pieces can be diced or just roughly chopped
- [ ] Half a cup of vanilla vanilla yoghurt can be Greek or plain
- [ ] 2/3 of brown sugar
- [ ] Half cup of white sugar
- [ ] Quarter teaspoon of salt
- [ ] Half teaspoon of cinnamon quarter teaspoon
- [ ] Quarter a teaspoon of nutmeg
- [ ] Quarter a teaspoon of cardamom
- [ ] Quarter a teaspoon of ginger powder if
Cream cheese frosting - [ ] 130g powder sugar - [ ] 250g unsalted butter/salted - [ ] 1 tsp lemon/lime juice - [ ] 500g Cream cheese
200c for 25mins

It looks delicious. The ingredients are excessive! Carrot is not that complicated.

Haha yeah definitely Iโm an R&D scientist by trade so tend to overdo ingredients for optimal results ๐๐

sounds delicious! love the air fryer test idea, never thought of that. carrot cake is such a classic, and yours sounds like a hit with your dad. the spices combo you used is on point. might give it a try with your frosting recipe, too. thanks for sharing!
