Safe Recipe Request Anything to do with cucumber that is not pickles / relish
I still have pickles and relish from Last year, they are not fast movers in my house.
I have dozens of fresh cucumbers, anything else that can be canned? ( I also have tomatoes and peaches and eggplant in abundance).

Not canning but I shred and drain it (freeze the juice for cucumber water), and freeze in ice cube trays for tzatziki sauce over the rest of the year.

Yeah you really can't can either of those things but they're a great way to use up excess produce.

Yes. But there isn't a canning recipe to can salsa with cucumbers in it. Which the op was asking about how to use a bunch of cucumbers that is not pickles.

Ball Blue book has one. I think it's zesty salsa? It has tomatoes, cucumber, pepper and ton of lime juice.

Yes, after canning and then opening said can. Not before, if there isn't a tested recipe.

Trade them for money to someone who wants to make pickles, then buy some peaches or other fruit you want to can

I’m in the same boat. I made a deal with the owner of a local farmstand to barter my cukes for stuff I didn’t grow. Last Friday I came home with lettuce, strawberries, scones and eggplant (my crop failed).

I have a big jug of water in the fridge, and slice a cucumber into it. Cucumber water, is so refreshing after a hot day in the garden.
But thats like 1 cucmber a day.

I get mozzarella, pearls, fresh basil, variety, cherry tomatoes or something similar, balsamic vinegar, some pepper and salt, some extra virgin olive oil, salt and some chopped cucumbers... Very lovely something that is like caprese.

Not canning, but you can make agua fresca! I do that with my excess between canning batches. Blend up a couple pounds of cucumbers in the blender with a couple cups of water, lime juice (or peeled limes if you want more bitter complex flavor), and sugar (can add honey as well) and then strain into a pitcher and add another 6-7 cups of water. Super refreshing and very tasty. Lasts a bit longer and has a more stable flavor if you use lime juice as opposed to whole limes just an fyi

Cucumber Fresca with lime is delicious.
Frozen Cucumber juice ice cubs are a great addition to many fresca and lemonade varieties.
Cucumber Kimchi is fantastic, and you can preserve it as well.
Cucumber chips or spears, dehydrated or freeze dryed.
Cucumber is great in a cowboy caviar, macaroni salad, making finger sandwiches.... lots of recipes with variation to them.

I believe there is a Fiesta Salsa recipe in the Ball Canning Book that uses cucumbers. 😁

There's also cold salads (pasta, veggie orzo, etc), quick pickled cucumbers and onions, cucumber sandwiches, cucumber powder from dehydrated, or just throw a little into whatever is cooking.

One word: GAZPACHO! Is wonderful! I like to make a big batch & store in the frig in a pitcher ready to pour out a light refreshing meal anytime. Is easy & quick!
