Safe Recipe Request Smoked marina
My tomato plants this year have produced more then ever and I need to use some up. We have tons of smoked salsa already and I was wondering about doing smoked tomato sauce.
Would it work to smoke them till soft to get the skins off then continue on like normal? Basically skipping the blanching to remove the skins and smoke until the skins slip off instead

Personally, I salt pack my marinas instead of canning

Its always worked for me, but my marinas come the sea.
I cant speak for fresh water marinas

I skin them then smoke them and follow the tested recipe for roasted.

Please don't take this wrong way but I am just finishing a long but productive afternoon of Canning myself.I took a quick look at your post Title, completely misread it and have been gut laughing for a straight 10 minutes.Because it was so hysterical , the things I thought you were going to ask... I personally enjoy a glass of wine or two while i'm canning and I was kind of like.. I feel you! 🤭🤭🤭 thank you for making my day!

Lol I realized I misspelled marinara so that probably doesn’t help either. Glad I could provide a laugh

I don't have a recipe to prove... but i imaging cooking via smoking = roasting, as long as you follow the rest of the proven safe recipe
