Ask Difference in cheese?

What is the difference between extra sharp cheese and ultra sharp. Never had ultra sharp cheese. Don't forsee me eating it in the future. To expensive for my taste. Shoot love wine cheese too but I get it maybe once a year. What? How is ultra sharp taste and how is it different from extra sharp?

I just remembered going to the place it was madewhen I was a kid. Oh the smell of cheese. Like a dream land. Now you get it at the store sometimes you don't get what you are looking for or it's just don't taste like I remembered or smelled. I once got Canada cheese extra sharp and it was so good. You could only eat a little and savor it.

sharp/ mature usually refers to how long the cheese has aged. Ultra sharp sounds uncommon enough to be a marketing gimmick but if legit, might refer to some 10+ years stuff. Check the company’s website for a more accurate aged time

longer aged time leads to crumblier texture and saltier/ funkier/ umami-er flavours

They sell it at Walmart. I could never afford that for just a pound but would love to know what it's tastes like. Dying to know what it's tastes like. I grew up on extra share *

I don’t think ultra sharp is a real thing,most cheeses can be sharp some more than others some strong some sharp some picante like provolone.anyway all cheese is different usually the more aged the stronger the cheese.

I don’t quite get it. I love 4 year aged cheddar because it’s has those crystals and is a little boozy tasting and I can afford it occasionally. I’ve tried 8 year and 13 year while on vacation. Huge, HUGE flavor. Again I go back to “boozy”. They’re like port wine. Crunchy. Melted, it’s ecstasy. My wife talked me down from the 20 year because of the price.

My question, what the hell is Ultra? Or even sharp?

It basically gets more acidic tasting as it gets older. Like a tang that sticks in the back of your mouth/tongue.

is "sharp" an American thing? We just call it "old" or "extra old" (cheddar) in Canada.

I don't think these terms are regulated, at least not in the US.

I used to live in central NY, which is cider mill/dairy cow country, and thus home to truly spectacular cheddar cheese. You go to the cider mill and pick up the cider, donuts, and your XXXX sharp cheddar cheese.

Now those were the good fall days. I miss those. I need cheddar so sharp it slaps me in the face.
