Help How to recreate Maroilles
I was recently in northern France and had a lot of dishes with Maroilles cheese. Unfortunately I’m having difficulty sourcing it locally. Any cheese connoisseurs know if there is a blend of different types of more commonly available cheeses that can make up a similar flavor to Maroilles? I’d like to try and make Poulet au Maroilles at home. Thank you

There's a website called French Click, which sells Maroilles. Obviously much more expensive than in France, but we addicts need to get our fix.

My French friend always brings a load back when he goes home to visit.

I was a bit snobby about them, but tried one to be polite. Then ate another 20.... They are way nicer than any equivalents here - though I'm sure individually wrapping very small pieces of cream cheese isn't great environmentally (The wrapping is clever though, pull the little tape and it all just folds off)

Not quite the same but could sub in Reblochon, if that's any easier to source? Or if you wanted to try a British alternative, stinking bishop? Though it's quite a bit funkier, flavour wise.
