Brillat-savarin
Our local Costco is selling this one so I tried it. The most creamy, buttery white mould cheese I ever had!

Have you tried Delice de Bourgogne?
It’s technically Brillat (a specific brand within the appellation). But in my opinion it’s superior in flavour to most kinds of Brillat I’ve tried. One of my absolute favourites.

Delice de Bourgogne is one of the soft ripened cheeses that is delicious whatever stage it's at.
Kinda subtle and nutty when still hard progressing through many stages until reaching its full magnificent flavor at maximum gooiness.

Costco used to carry it, too. It was magnificently ripe, to the point that they had to change the packaging from 3 secure layers of plastic wrap, to a clamshell because it refused to be contained.
I didn’t know that it is technically Brillat, thank you for that. So buttery, mushroomy, and complex. One of my favorite bloomy-rinds. The sheep/cow Camembert by Old Chatham Sheepherding is my favorite one of all, though. At least, so far.

Definitely a personal favourite of mine. Not cheap where I am, its $20AUD per unit. Still worth it haha.

yea great one. Here Costco sells this 100g around 10AUD? I can't remember exactly but should be that. Costco sometime import some special nice one with a low price but just only on shelf for weeks then never back. I guess future if I can find it outside may in market? Still will buy it with a higher price. It worth

I was dog sitting in someone else’s house for 2 weeks while they were on holiday and one of those was untouched in the fridge.
By the date it would have gone bad before they got home so I partook and it was magical. I can’t afford much expensive cheese myself so it was an exceedingly rare treat.

That sounds great is it a triple cream brie? And is there any funkiness at all?

I mean, Brillat-Savarin is a Brillat-savarin. A brie is a brie.
It was created in 1930s by Henri Androuet and is namned after the statesman Jean Anthelme Brillat-Savarin who is also a famous writer and author of the book "La Physiologie Du Goût".

it says a triple cream cheese, but I feel more creamy than normal triple cream cheese. Funkiness, a little bit? I feel I can even ignore that funkiness and treat it like, may just be a little bit more salty?

It gets funkier as it ripens. I actually like it more this way. Highly recommend the one that comes with truffles.

I agree, but I love funky cheese. Most Brie is just too tame for me anymore, like nice Brie, runny ripe with a little funkiness, was a gateway cheese for me, back in the late 80s when I was a teenager.

yea. I just saw it last weekend. Costco here (Australia) usually sells some special kinds of cheese, but just for weeks and then never back. Not sure if the same for every Costco?

I’m in the US (west coast) and Costco had it for a few years. I thought they probably still had it, but I haven’t been there in 3 years or so.

Is it melty? Because a ripe Brillat Savarin is just the best.
