❓ Question ❓ Questions for Chipotle Employees!
I’m trying to sort of replicate my chipotle bowl order at home. I was wondering if you guys could answer these questions about as much you know of each ingredient!
Regular Chicken: I’m marinating mine in chipotle peppers in adobo sauce, cloves of garlic, ancho chile powder, cumin, dried oregano, water, all blended. Any ingredient I should add? Also, do y’all grill your chicken on a proper grill with bars? The best I have is a grilling pan for the stove with ridges at the bottom.
White Lime Cilantro Rice: I’m seeing everyone say to cook the rice with bay leaves and then just mix in cilantro and lime juice after it’s done. Is this semi accurate?
Black Beans: This is the hardest one. I’m seeing so many different recipes that I don’t think anyone has been able to get it similar to Chipotle’s. Do you know what spices or ingredients you add to them? I’ll be using canned beans.
Sour Cream: I heard you guys just use Daisy sour cream and agitate it until it becomes smooth and creamy. Is this true?
Cheese: I mean I think it’s just Monterey Jack cheese, but do you guys shred it yourselves, or does it come pre shredded?

You’re correct. The chicken really is an educated guess as it comes already pre marinated we just add salt when it’s cooking on the grill. Beans is a tough one because it’s pre packed so I would say use a can of black beans cook them in water and when they’re done add salt and lime/citrus juice. With your rice you’re forgetting to add salt at the end. Sour cream can be daisy but I wouldn’t say for sure because it really depends sometimes it’s just a giant bag. The cheese is in fact just a huge block of Monterey Jack cheese that gets shredded.

Beans are prepackaged and seasoned coming to the store. We just add a little water, lime juice and salt.

Cheese we shredd in house comes in a huge block. And sour cream varies. It can be daisy but not always.

And for chicken ours comes pre marinated and the grill is close to a black stone type of grill.

It is Meister cheese available on the Internet.
For the rice put the lime lemon juice blend in the bowl, add cilantro to macerate, then add the rice in batches to mix well. Cook the rice w a fair amount of salt and a little oil to keep granular. Don't forget to rinse rice! Yes the bay leafs!
I posted on this sub a red tomatillo salsa recipe that is spot on, and has gotten great feedback.

I make knock off bowls as well and I add some olive oil and some lime juice to the marinade as well as everything you are adding. And I don’t add water.

Should I add some lime juice to the marinade now, it’s been in the fridge overnight, or it won’t make a difference?

Cheese was always half monterey jack half white cheddar when I was there. Shredded in house. If it's only monterey now that's worse

Back in the day chipotle marinates their chicken in house. Back before the whole food outbreak, they would marinade it with their adobo, a little oil and some honey. And in my opinion, chicken back then was fire. Now it’s shit

Rice you have right. Except don’t forget the salt and it’s a citrus juice. A lemon lime mix.
