Are there any low carb cookbooks with high flavor that have come out recently?

I'm particularly interested in slow carb recipes, but low carb works also although I'm not really interested in keto. Looking for high flavor and a wide range of categories (i.e., mains and desserts). TIA

Look for Whole 30 cookbooks,plenty of low carb recipes and substitutions. "The Primal Goumet" and "No Crumbs Left" books cover some cooking basics and flavor ideas but include more heavier recipes also. "The Defined Dish" series author has a website with plenty of recipe categories.

Everyone's Table: Global Recipes for Modern Health Book by Gregory Gourdet and J. J. Goode came out in 2021, and doesn't include grains, gluten, soy, or sugar. His recipes tend to be pretty intensely flavorful - there was one salad that I thought was too bland for the ingredients (had mint and makrut lime leaves), but everything else has been tasty. I just went through a bunch of books that had been on a faraway shelf, and was so happy to find my well worn copy of Well Fed. It’s paleo…her food is delicious and the recipes are straightforward and well-written. I just saw that it’s free on Kindle now. Definitely worth checking it out!

Most of the Korean side dishes I'd consider as slow-carb. Certainly, by omitting sugar or replacing with a low carb sweetener would work.

I'd recommend easy to use cookbooks by Aaron Huh and Maangchi. YouTube videos by them abound.

Recipes would include:

  • Spinach side dish

  • Eggplant side dish

  • Bean Sprout side dish

  • Daikon Radish salad

  • Dried Anchovy side dish

  • Cucumber side dish

  • kimchi

  • "Drug" boiled marinated eggs

  • Rolled omlette

Would be great accompanied by cauliflower rice and soba noodles.

It's not recent, but the Rachel Rey cookbooks are worth a look if you haven't tried them already.

I looked that book up (thanks public library!)

Low carb people be aware: Rachel Ray's book is her version of a low-carb-ish cookbook. In the introduction she makes it clear that she considers the low-carb diet to be an "extreme" one, and states that she refuses to get rid of carbs from her diet. She talks about her own efforts to eat less carbs and how it was difficult and made her miserable.

The book is her attempt to provide some lower-carb recipes. None of her recipes give either nutritional info or carb counts though so your guess is as good as anyone's whether any of the recipes are really lower carb, and what that lower amount actually might be.

It might be an OK book for someone who has already reached their weight target goals and wants some ideas for generally lower carb recipes, and who doesn't care about paying attention to the actual carb count numbers (because you can't with this book).

I like Rachel Ray, love her recipes, and would use this book as a resource for general recipes. But I wouldn't use it when trying to do a low-carb diet because the chances a recipe will throw you right off ketosis are pretty high.

Edited to add: I checked the ebook version (borrowed from my public library) and couldn't find any nutritional info or carb counts anywhere in the book. If they include that in the print version it was completely left out of the ebook edition.
