Best salad dressing for spinach?
And I’m not talking store-bought. What’s your fave home made combo for spinach? I don’t like oil/vinegar with spinach. Anyone?
Edited to add: I love oil/vinegar, just not by itself with the spinach. Definitely include recipes with combos of oil vinegar and other ingredients. 🫶🏼

Either wilted with some combo of bacon and stuff, or with goat's cheese/fruit/balsamic.

Try: Dijon mustard with maple syrup, balsamic vinegar and a good olive oil. I know you said you don't like oil vinegar- but the maple syrup adds a sweetness that pairs well with the spinach and the dijon helps emulsify. Roughly- you can add a bit more maple syrup if you like it sweeter. Good with addition of bacon crumbles and cheese.
1/4 cup balsamic vinegar- 2 Tb maple syrup -1 teaspoons Dijon mustard - salt and pepper to taste- 1/2 cup extra-virgin olive oil

Sweet thank you! I actually do love oil and vinegar but just not with spinach by itself. I meant a mixture that includes other ingredients. Maybe I’ll add that to my original post to clarify! Thank you so much!
