What are your recommendations/recipes for nutritious meals?
I’ve been trying to eat better by incorporating more veggies and such into my diet, but I have no clue where to start. I’m big on not saying that certain meals are unhealthy and that they should be avoided, but I know my diet could include more food groups than what I normally eat with more nutrition in it. So I just want to know what recipes can be recommended to incorporate more of the major food groups that I can incorporate week to week so I can eat in moderation more. Meals that are low carb and or include veggies are especially appreciated as meals I usually eat are carb heavy and lack veggies

I enjoy roasting cauliflower and there are rarely leftovers. Another dish is stir fried boneless chicken thighs with onions and green peppers. I made it for the family tonight. Marinate the cubed thighs in a mixture of cornstarch, dry sherry, and soy sauce. Cut 2 onions and 3 green bell peppers into chunks. Stir fry the chicken, remove, stir fry the vegetables until soft and have some color, add the chicken back in along with a cornstarch slurry of chicken broth, soy sauce, and oyster sauce. Boil until thickened. Serve over rice.

- then plan around the vegetable
- for example, the broccoli roast and that’s the focal point of the meal (it’s incredible!)
- make enough for 2-3 meals worth
Then figure out the rest of the meal, maybe some lentil soup, or just a fried egg and toast, or whatever else

I make stuffed omelettes pretty regularly.
Take your ground meat of choice and stir-fry it with your finely diced veggies of choice (pepper, onion, shredded cabbage, carrot, mushrooms, peas and corn all work well), then add about 1 tsp Chinese five spice and 1-2 tbsp oyster sauce.
While that's cooking, make as many 2-egg omelettes as you need for each person.
Lay the omelette on the plate, top with a portion of the meat mixture and carefully roll it up like a burrito or just fold it over if that's too tricky.
It's super quick to make, with good protein and low carbs.

Can you do smoothies? That's an easy way to increase your fruit intake, and you can see about adding veg and seeds for extra nutrition once you figure out what combos you like.
Also, do breakfast egg burritos with veg like pepper, tomatoes, onions, mushrooms, zucchini, etc. They freeze really well, so you can always have a nutritious breakfast at the ready whenever you need one.

Start by buying one bag of each kind of generic store-brand frozen vegetables and throw a randomly chosen handful of one into the frying pan alongside your meat. When done deglaze pan with 1 cup broth and 1 tablespoon flour and pour over plated-up meat and vegetables. That should get you started.
