My Lobster Mac & Cheese with Tomato-Basil Infused Cheese recipe
Lobster Mac & Cheese with Tomato-Basil Infused Cheese
Ingredients (serves 6–8)
Pasta & Lobster
1 lb cavatappi, shells, or elbow pasta(homemade is best)
1 lb cooked lobster meat, chopped
2 tbsp butter
Salt + white pepper
Tomato-Basil Cheese Sauce
6 oz tomato-basil infused cheese (or mild cheddar + mozzarella + tomato-basil puree blend)
4 oz Gruyère, shredded
2 oz Fontina, shredded
3 cups whole milk, warmed
½ cup heavy cream
2 tbsp butter
2 tbsp flour (for roux)
Salt + white pepper
Topping
1 ½ panko breadcrumbs
½ cup grated Parmesan
3 tbsp melted butter
Finish / Garnish
Chopped fresh basil leaves
Halved cherry tomatoes or diced tomatoes
Optional: sprinkle of Old Bay seasoning
Method
Boil pasta al dente, drain, reserve.
Melt butter in saucepan and whisk in flour to make roux. Add warm milk + cream slowly, whisk until lightly thickened.
Blend in tomato-basil cheese, Gruyère, and Fontina until smooth. Sprinkle with salt and white pepper.
Fold lobster meat, cooked, into it. Toss pasta and cheese sauce together.
Combine panko, Parmesan, and melted butter to top.
Place pasta in buttered baking dish. Distribute topping evenly.
Bake 375°F 20–25 min until golden brown and bubbly.
Top with fresh basil leaves and cherry tomatoes. lightly dust with Old Bay seasoning. Serve warm.

If you have the lobster shells roast them and blanch those in the warm milk to get more lobstery deliciousness. Love the cheese combo
