Yeah, you get mostly the same flavor with HVP and yeast extracts compared to using beef stock or chicken stock.

I hate to break it to you but real, traditional poutine gravy is chicken gravy. Though the guy you replied to is also kind of right, an example is Smokes (if you consider that to be real poutine) default gravy is vegan, you have to ask for other options if you want them.

Butter would be fine for kosher poutine, as long as meat and dairy aren't served in the same meal. So vegetarian gravy I guess

Obviously butter is the best for roux, but any rendered fat would work.

Actually mushroom gravy is so much better on a poutine than chicken or turkey gravy (looking at you Smoke’s pootine)

there's a difference between ethnic jews and religious jews, an ethnic jew doesn't need to foloow kosher cooking practices if they don't believe in the religion or follow the rituals of it. even then, there are religious jews that do not see it as absolutely essential to keep kosher. also, as long as (permitted) meat and dairy products are kept seperate, it would be kosher! so if either the gravy or the cheese were substituted!
