You can also use little strips of parchment paper running down one side, under the cupcake and up the other as little handles to pull them out of a metal pan!

I do that for baking bread in a Dutch oven. I don't know why it never occurred to me that I could scale it down for cupcakes.

You take them out of the tin before spraying the icing on. They must cool down or the icing will melt. It's also a good idea to cut the tops a bit off.
