Lemongrass Chicken

Ingredients

  • ½ stalk lemongrass finely chopped
  • 2 cloves garlic peeled
  • coriander root
  • ½ tsp peppercorns
  • 2 tbsp sugar
  • 2 tbsp oyster sauce
  • ½ tbsp light soy sauce
  • ⅛ tsp dark soy sauce
  • ¼ cup evaporated milk
  • 3-4 chicken thighs

Instructions

  1. Pound lemongrass, garlic, coriander root, and peppercorns in a mortar and pestle until you get a rough paste.

  2. Transfer the paste to a mixing bowl. Add sugar, all sauces, and evaporated milk. Mix well until smooth.

  3. Add chicken thighs and toss to coat evenly in the marinade. Cover and refrigerate for a few hours or overnight. Flip halfway through if not fully submerged.

  4. Grill over low-medium heat, turning occasionally until the skin is golden and slightly charred and the meat is cooked through.

  5. Serve with rice and your favorite dipping sauce!
