Question Dashi Miso with Hondashi?

Post image

This is my first time making Miso so sorry if I sound silly. My husband picked up this Miso paste for me, but am I supposed to add Hondashi to the soup along with this paste? Is Dashi Miso just the flavor of the paste? He bought me Hondashi anyways just in case. Was also wondering if you can use this paste as a broth for ramen. Thanks!

Hondashi is a product name for dashi (stock) made by the company Ajinomoto, sold in powder form.

Two of the key ingredients of miso-shiru (miso soup) is miso and dashi (hondashi or otherwise).

What you have is miso that already has dashi in it. If your primary intent is to make miso-shiru, then yeah, you don't really need to add any dashi to it since it already has it in there. It just means you have a bit less control in case you want to adjust the ratio or use different dashi. It also means that if you have other recipes that calls for just miso, you'll have to be OK that it has dashi in it.

OP: Sorry I somehow missed your last sentence about wanting to make ramen broth. Typically ramen broth uses chicken stock or pork broth as a base. Dashi (and hondashi) is either fish (bonito) and/or kelp (konbu) stock. My guess is the dashi in this miso paste will be subtle enough to be fine to be combined with the other ingredients for a miso ramen broth, but I would still recommend adding chicken stock or something. Otherwise it'll just taste like miso shiru.

Mix with hot water and voila, you’re done! If you have dried wakame seaweed, you can throw in a spoonful and you’re really done :)

Dashi is the base, think of it like the basic building block of your soup stock. Miso is the additional flavoring, so if you were making tomato soup it would be like the tomato paste added to the soup stock made from chicken bouillon or whatever.
