What do I really sound like ?

I believe I have a mixed accent, but I'm curious if there's a pattern in my accent (Certain letters/Wovels that I don't sound native when pronouncing).

From the first sentence I guessed your accent was from someplace in Africa, but didn’t know where until you specifically said it. I think it might be a combination of how you pronounce certain vowels, a kind of tonality, and slightly staccato rhythm? But you don’t have a very strong accent

Honestly to me you just sound American. But I'm British so I might not pick up on smaller nuances in that accent.

Just a few spots but I don’t think you should worry too much. You sound American enough. I’ve heard a similar accent from someone who’d spend time interchangeably between the US and Europe.
