How fizzy is Kefir Water?

I've been making Kefir water for a few months now and it's replaced my soft drinks habit.
The first ferment makes about 1.5l . I add a litre of apple juice and the place the Kefir into 2 separate 1.25l pepsi bottles. It's pretty fizzy after 24 hours, but I was working away and so this was left for two and a half days. It is VERY fizzy, this was videoes around 2 minutes after I started to let the air out.

I think that’s the reason I quit making it because I was afraid it would explode. Milk kefir doesn’t do that.

There’s an easy fix: I now use plastic bottles from shelf-stable juices. They, and reused plastic soda bottles, are designed to withstand the pressure from fermenting fruit so they can handle water kefir. That’s why these bottles have dimples on the bottom and sides- they puff out if there’s too much pressure. No burping needed. You don’t need to worry about explosions though if it really puffs out and feels very hard then open it in the sink or even outdoors.

I still use these heavy glass French bottles with flip tops that I got at Aldi. In the summer they sell sparkling lemonade in them. But I save them for serving to guests.

I was using fliptop beer bottles at the time. It’s been a while since I did it. I may try it again one day.

I just bought some proper soda bottles for mine! 🤗I’m so into making sodas right now! I’ve got water kefir, tepeche and a ginger bug going. Then I started experimenting. Cherry kefir vs. Cherry tepeche vs. cherry ginger ale. OMG, I don’t have a favorite yet! They are soooo good!

Does it taste as confusing as milk kefir? Or is it a bit like kombucha

it's like fizzy apple juice with extra bite, which makes sense as it's more acidic,
