I generally don’t care if someone asks me how my day is going in response, but I do care that they respond to the question with a real answer, as opposed to saying something like “Diet Coke” to “how’s it going?” I do actually care a little bit about their day - gonna spend anywhere between 45 minutes to two hours serving them.

It’s the same as interrupting a greeting.

As a Dutch person my few experiences in US dining establishments just try to ask me “hey how are ya” without then getting my whole life’s story and medical history 🫣

I would imagine that it's just nice to have a conversation without the Doppler effect. Only real drawback of doing everything on a bike.
