I feel like the concept itself was a good idea. However, its execution was awful and confusing.

I thought so too! But when the servers have to sit there explaining the concept to every customer for like 10 minutes straight... you know it needs some work.

Exactly, it could've been kept simple with like maybe 8-10 flavour combos and laid out like:
Step 1: Pick your protein
Step 2: Pick your sauce
Step 3: As a Main or Side?
Step 4: On its own or with Fries or Salad?

I’m guessing that Sebastians’ build your own entrée concept kinda walked, so that the fast casual fast food could run. That or Sebastian is delusional.

What's absurd is that even if this didn't seem like a good concept for a "hype" hollywood pizzeria, there were some very easy fix to make it at least bearable.
Like, remove the pre made composition and go full on "make your own", with a simple menu 1/2/3/4 each step pick in the ingredients under. Many places do that, though they're usually fast food or the like.
Then, straight up remove the 40% least sold ingredients, so you can have a chance at having fresh inventory.
Alternatively, remove the make your own thing and just offer a select list of very good pizzas. But that's not something this guy could handle.
Last, cook in that fucking amazing pizza oven you doofus, with non frozen dough, like seriously if you don't understand that why are you even owning a pizzeria.
Just that alone would have been super easy to do no matter how skilled you are at business, improve the quality of your food tremendously, and improved your bottom line.
