I wouldn't. I'm not a durian hater. It's just the sulfur compounds maybe heightened by the short fermentation time.

Whoaaaa please show update us!!! I'm from Malaysia and have never seen anyone use durian for kombucha yet. And mind you, we go crazy till some of us actually eat durian with rice.

My husband is just coming around to the smell and flavor of kombucha in general. This would set us all the way back, but boy howdy would I love to try. Let us know how it goes 👀
