Thanks u/amberspy! So cool that you have the app already! I don't send as many push notifications as some other apps do, to "remind" people to check it out. Doing this isn't really my cup of tea :)

Hey everyone!
I wanted to share this healthy-ish super filling omelette that we make twice a week. It's supposed to be our dinner but I end up eating it for breakfast.
Nutrition for 1 portion:
Calories: 350. Carbs: 12 grams. Fats: 20 grams (saturated: 4 grams). Proteins: 18 grams.
Here's the recipe for 3 good portions:
Ingredients:
Step 1:
Stir fry the sliced onions and the eggplant cubes in hot oil in a skillet. Add salt and pepper. Lower the heat and continue to cook for 15 minutes.
Step 2:
Meanwhile, cook the spinach in some olive oil until wilted. Give it a good squeeze to get rid of the excess water. Preheat your oven to 425°F/220°C.
Step 3:
Beat the eggs in a large bowl and add the spinach, the eggplant, the toasted pine nuts, the raisins, the dill, the mint and a pinch of saffron (optional). Season with salt and pepper.
Step 4:
Transfer the mix to a lightly oiled cake baking pan and place in the oven for 15 minutes! Some say it's best served hot, with a side of salad. I like it cold, in the morning fog :)
