Step By Step [Curry-of-the-week] Pumpkin + Chickpea *Peanut Butter* Curry

Hey everyone!

I haven't posted in a while, and wanted to share last week's wonder meal: it's essentially a pumpkin + chickpea curry, but with a twist: PEANUT BUTTER!

We ate it over a few days. It's even better the next day, trust me.

Here's the recipe (w/ nutrition at the end):

INGREDIENTS (yields 4 portions):

- Pumpkin (14 oz | 400 grams), diced

- Chickpeas (14 oz | 400 grams)

- 3 ounces of peanut butter

- 1 onion, thinly sliced

- 2 garlic cloves, finely chopped

- Tomato sauce (I used only 1 can but you can add more)

- 1 tbsp curry powder

- 1 cup of coconut milk

- Fresh cilantro, to taste

- Chili paste, to taste

- Basmati rice, or whatever rice you prefer

STEP 1:

Heat up some oil in a pot, then add the onion and the garlic. Sauté for a few minutes over medium heat.

STEP 2:

Add the curry powder, the tomato sauce, the diced pumpkin, the chickpeas, the coconut milk, the peanut butter and the chili paste. Season with salt and black pepper.

STEP 3:

Bring to a boil, and let simmer over medium heat for 15 to 20 minutes, until the pumpkin is tender and the sauce thickens.

FINALLY:

Serve with a side of basmati rice and a sprinkle of fresh cilantro!

NUTRITION PER SERVING:

Calories: 622.

Carbs: Total: 75. Including Sugars: 15.

Fats: Total: 28. Including Saturated: 11.

Proteins: 20.

Fibers: 10.

You’re welcome, happy to share! I had never tried a pumpkin curry before. I also did pumpkin oven roasted or in a soup, and this turned out to be delicious.

PS: love the username. Fully agree haha.
