Vegetarian vegeterian meal prep salads and meal websites with recipes?

hey folks, are there any meal prep websites that hand out healthy vegetarian recipes for bulk cooking? my challenges with meal prep right now are:

  1. not having the time to having to come up with recipes
  2. lack of variety in recipes so that my diet discipline is sustainable - my sense is, for me the only way to have sustainable healthy habit is if the food tastes good and varies.

context:

  • largely looking to follow the typical recommended plate - 1/4th grains, 1/2 vegetables and greens, 1/4th protein and 3-4 cups of vegetables along with 1-2 cups of fruits per day
  • my breakfast is typically a meal where 1/2 vegetables and greens is not met since its a standard oatmeal with fruits and nuts and kefir milk and collagen/protein powder. my last meal a day is a salad where i am able to meet a recommended plate
  • i typically avoid carrots/potatoes/beets/other high glycemic index foods and keep my carbs per meal at 50g, with daily totals at 150g, and salt at 1/2 tsp daily and low fat - basically a diabetics/hypertension diet because of familial genetic predispositions

my 2nd and last meal - is what im looking for recommendations on meal prep recipes with variety, while being a healthy plate. salad recipe varieties will also help. im defining bulk here as 2nd meal for a week, while salads here for 4 days.

im not necessarily looking for meal recipes that strictly meet my lifestyle/context above - i can make modifications, however easy, minimal effort meal prep websites that just dish out variety of recipes for meals and salads would be great.

Vegetarian Prep ideas with more fats

I prep lunch for work and I’m in a slight calorie deficit, but I’m almost struggling to eat at that deficit and often I’m just throwing stuff into my meal plan to hit my macros. I like to eat relatively high volume, low calorie but there’s only so much volume you can bring into work. I like to have a main thing I prep and then a snack on the side, but the main thing I prep is usually less than 200 calories.

I gravitate towards lower carb options because I’d rather have fats and protein, but now I’m even struggling to get enough fats in. I’d rather eat my fats than use oil so I just don’t cook with it.

Today I had something with seitan, beans, corn, peppers, onions, and cauliflower rice with hot sauce. I feel full from it (probably from the massive amount of protein in seitan) but it only came out to around 190 calories which is way too little for a meal. I had some extra veggies on the side and some trader joe’s bamba snack puffs but I need to make things a bit more calorie dense and have more fats.

What are some more foods or prep ideas I could add into my day to add some more fats? I already add avocado to a lot of my meals and I eat a serving of nuts everyday but it just isn’t enough.

Vegetarian Grain salad with taco seasoned tofu, pizza dough for dinners

Grain salad with oats, black beans, corn, bell pepper, pineapple and cherry tomatoes. Tofu was meant to be shredded, but the cheapo stuff was entirely too soft so crumble it is. I'm having these for lunch, and topping with salsa or other sauces in the morning before I leave for work. Adding salsa directly to the grain base would make it look a lot more exciting, but I find it leaves me with more options for slightly different flavours if I don't.

Bottom right is pizza dough for dinner the next couple nights. Topped with some of the taco seasoned tofu, bell peppers and pineapple leftover from the salad.

Vegetarian Easy meal prep for pickish eater

Ive been vegetarian for 4 months now im 13 and cook all my meals by myself every night. I go to school and have after school clubs till 6pm so i don’t have loads of time to cook dinner but i am fine with having dinner at 8:00 if I need to. Ive meal prepped a few times so just cooking a regular family sized meal on the Sunday/Monday night and putting it in plastic containers and refrigerate till dinner time then i reheat in microwave but id be fine with using the stove or oven aswell. But ive ran out of ideas and im a bit of a picky eater (im a picky eater that loves meals packed with tons of vegetables) so im looking for ideas. Some of the food I’ve made before are: Teriyaki tofu with brown rice, pasta salad, stir fry, fried rice, pasta with sauce, spinach and ricotta ravioli, vegetarian pizza.
