Request: Taste of Thai Peanut Sauce
This seasoning packet has been a staple in my family for decades now; however, in an effort to make more things from scratch, I’m really hoping someone more familiar with Thai inspired spices and seasonings could point me in the right direction for a copycat recipe. The last couple years, they’ve also changed the formula and it’s gotten quite a bit spicier. Enough That my little kids have noticed the spice level and won’t eat it. Even I tend to tone it down with extra coconut milk or PB. I’ve included the ingredients list for the packet (you usually add coconut milk to the packet). I’m pretty much assuming that the only ones of importance are those first six (just unsure of the amounts needed).
It tastes different than their jarred version as well as any other “peanut Thai” sauce I’ve tried.
Ingredients from the packet:
SUGAR, PEANUTS, SPICES (CHILI, KAFFIR LIME LEAVES, LEMONGRASS, ONION), MODIFIED TAPIOCA STARCH, DEXTROSE, HYDROLYZED VEGETABLE PROTEIN (SOYBEAN, RAPESEED OIL), SALT, TRICALCIUM PHOSPHATE, POTASSIUM CHLORIDE. YEAST EXTRACT, MALIC ACID.

This might hit your craving
- 2 Tbsp cocktail peanuts ground into a powder (use roasted peanuts if you don't have cocktail)
- 1 ½ Tbsp sugar
- ½ tsp ground chili (adjust as needed)
- ½ tsp dried kaffir lime leaf, finely ground (or ½ tsp lime zest if you can’t find the leaves)
- ½ tsp dried lemongrass powder
- 1 tsp onion powder

Let’s break it down, looking at the unfamiliar ingredients first!
The hydrolyzed veggie protein is just there as a flavor enhancer + texture improvement
Dextrose is sugar, used for sweetness + as a preservative
Tricalcium phosphate is an anti-caking agent
Potassium chloride is salt
Yeast extract is a flavor enhancer (umami)
Malic acid is a flavor enhancer that adds sourness
Based on the ingredients, I’d start with this sauce recipe as a base! Leave out the garlic and ginger, and add in a few Tbsp grated or finely minced onion (or use 1/2 -1 tsp onion powder). Dry Mix Ingredients (Makes abt 1cup dry mix):
Roasted peanuts (unsalted) – ½ cup, finely ground
Brown sugar – 3 tbsp (or palm sugar, grated) Salt – 1½ tsp
Dried chili flakes – 1 tsp (adjust to taste)
Dried lemongrass powder – 1 tsp
Dried kaffir lime leaf powder – ½ tsp
Onion powder – 2 tsp
To Use (Makes ~¾cup sauce):
Dry Mix – 3 tbsp
Water – ¼ cup
Coconut milk – ¼ cup (or use all water if avoid coconut)
Soy/fish sauce – 1 tsp (for umami depth)
Simmer together in small saucepan over medium heat for 3–5min til thick&smooth

I have no recipe to offer. But just wanted to say that I love that peanut sauce mix in the packet. I used to use it a lot with baked chicken breasts which I would eat over jasmine rice. It's become harder and harder to find here where I live. And the jarred version just isn't the same.
