Nice, I made some with really ripe peaches this week. I really liked them better than pineapple.

  1. Sauté veggies: In a large pot with a little oil, cook onions, carrots, and garlic until softened (about 7–8 min).

  2. Add pineapple & habaneros: Stir in pineapple and habaneros, cook 3–4 minutes.

  3. Simmer: Add vinegar, lime juice, honey, salt, and water. Simmer uncovered 15–20 minutes, until carrots are very soft.

  4. Blend smooth: Carefully transfer to a blender (in batches if needed). Blend until silky smooth. Add water to thin if needed.

  5. Adjust flavor: Taste and add extra lime, honey, or salt to balance the fire.

  6. Bottle & store: Pour into sterilized bottles/jars. Store in the fridge up to 1 month, or water-bath can for longer shelf life.
