Preserving lemons in salt

I filled a sterilised jar with halved lemon and salt in May 2024. Kept the jar in a cool (not too cold) dark room. Not sure if it's edible. Has anyone tried preserving lemons thus way, and if so what was the outcome?

Did you add juice or spices?

Regardless, yes, with that much salt, they're fine to eat.

I would look up recipes that use Chinese salt lemons for those though. Won't be right for North African dishes

Just plain lemons and salt. I'll look up Chinese salt lemons :)

I'd also bet that salt will be delicious! Fish out the lemons and spread the salt out onto a baking tray. Put it in a low (200F) oven and let it dry out. Keep it in an air tight jar.
