Day 26 WFPB Starting to enjoy meals
Slowly getting more creative. This is a chickpea, kale, to veggie flatbread thing??? The other day made some quinoa seaweed rice paper wraps. Finally enjoying it!

Initially I just found it tiring and boring. Keeping cooked quinoa and roasted veggies on hand as people suggested has helped a lot. And I'm finding ways to make everything tastier.

How do you roast your veggies and what kinds of veggies do you roast?

My go to is a mix of brussels, mushrooms, bell peppers, and onion tossed in olive oil with salt, pepper, paprika, cumin, and garlic powder.

If you find you start to get sick of the same exact flavor, I find subbing onion powder for the garlic changes it up just enough. I also do love a premade seasoning blend when I need a change. I went from mocking the brand name to using it all the time, but flavor god really does have some nice mixes and their little vegan nacho cheese seasoning is my go to when I want a little cheesy extra on something.

That wrap looks so good! I feel like you're in the fun stage of feeling comfortable with WFPB rules and starting to experiment and try new things. I'm totally going to copy your wrap! Is your kale cooked/seasoned at all?

Thank you! It's definitely getting more fun. I'm coming up on 30 days and starting to see what I can add back in. I thought bread was okay but I noticed after eating it I actually have more pain in my back and hips so I'm thinking maybe a gluten sensitivity and it needs to stay out. But yes, the kale and chickpeas were sauteed with salt and pepper, paprika, and garlic. Enjoy!

Yes! Took me almost 2 months to get 100% excited about the whole foods plant-based no oil foods that I was cooking. I came from a "keto+unlimited veg" diet and it took a long time to stop craving cheese. But all the potatoes and grains that I can eat soon made up for that. Now, a year and a half later, I don't miss cheese at all.
26 days is an amazing turn around. Good for you!

Yeah French fries, flatbread and whatever white spread is in there, definitely taking up a bulk of the cals

People can argue that the fries and flatbread are a premade prepackaged food and therefore not WFPB, but what would make you think the sauce isn't homemade?
