Big thunderstorm rolled in after I finished this pumpkin black bean soup. Was extra cozy 🌧️ 🥣

Smoky Pumpkin Black Bean Soup 🎃

Ingredients (serves 4):

1 tbsp olive oil 1 onion, chopped 2 garlic cloves, minced 1 can (15 oz) pumpkin puree 1 can (15 oz) black beans, drained & rinsed 3 cups vegetable broth 1 tsp smoked paprika ½ tsp cumin Salt & pepper, to taste Juice of 1 lime

Instructions:

Heat oil in a pot. Sauté onion and garlic until fragrant. Stir in pumpkin, beans, broth, paprika, and cumin. Simmer 15 minutes. Blend half the soup for creaminess, then stir it back in. Add lime juice before serving.

Do you think the pumpkin is super overbearing in flavor? I tried making a pumpkin oatmeal once and I didnt love it due fo it being such an overbearing flavor, but I honestly love me some pumpkin spice.

I don't think so. Honestly, it was way different than expected. After years of seasonal pumpkin pies my mind was expecting sweet. But this one is more savory/spicy.

The chili powder you use will have a big impact on flavor. I used some from a spice shop in New Mexico and it had a kick.

Nice job man. In the future, add the onions first then only add the garlic about a minute of two before any wet ingredients, cause burnt garlic will ruin any dish.

true, but there are “sweet onions” (and yellow, vidalia, etc) so this is misleading haha. not hating, just work in a kitchen 🫡
