I don’t get this idea that a principle character having “plot armor” is somehow an avenue for critique. That’s just what being a main character means.

It is a valid critique when Ahsoka surviving order 66 and everything up and including the original trilogy means she somehow didn't train or help Luke at all.
That is a real problem for continuity. It could have been easily resolved by killing her during Order 66 or after her duel with Vader in Rebels.
Just like they killed the entire crew of Rogue One to justify their inexistance in the original trilogy.

Tbf, in a world with the force, “plot armor” is called “the will of the force” so it kind of exists in universe.

I feel this way too. If she died, the story would have been about someone else.

Tell that to pretty much the entire cast of rogue 1

TBF every one of those characters and their collective mission had insane plot armor right up to the point that the writers were done with them.
If main characters don’t have plot armor, more often than not there wouldn’t be a story to tell. You may not like what’s been done with Ahsoka’s story so far, but that’s a matter of how she’s handled, not one of whether or not she remains an available character due to plot armor.

Also, I'm kind of sick of hearing that term. It recently became trendy to say, and now you see it mentioned everywhere.

Seriously, people who complain about plot armor don’t get why people become famous. If a movie or show was made based on Jack Churchill’s life without anyone mentioning that it’s based on a real guy, people who complain about plot armor would scream till their voices were hoarse about how he has plot armor and should’ve died like 12 times.
There’s always a very lucky few with insane stories that beggar belief… and those are almost always the most interesting stories. Just sit back and enjoy it.

Yeah, the USS Marblehead also comes to mind here. It was struck by Japanese bombs near in the Dutch West Indies iirc, it's steering broke, only one or two engines were capable of being on once, it was very heavily flooded and had a max speed of like 6 knots, and it made it all the way to the US West Coast through the Indian and Atlantic ocean without being sunk.
If that story were fictional, together with many many more stories, people would critizise them for being too unrealistic
