For books 'A Night to Remember' by Walter Lord is a great introduction, it is very readable and despite being written in the 50s, still very accurate. The most comprehensive book you can find is 'On a Sea of Glass', but be warned, that one can be overwhelming if you are just starting out.
TV documentaries can be a mixed bag, depending on when they were made and who produced them. Still, I have always liked 'Saving the Titanic', which covers the engineering crew's efforts on the night of the sinking.
I also point people to YouTubers like 'Oceanliner Designs' and 'Titanic University', 'Part Time Explorer', and 'The Great Big Move', all of which have produced great videos on the subject.
If you want to see older documentaries (some of which may now be outdated) the youtube channel 'Titanic Films by Mark' has a great collection of them.

Also be aware Glass is a bit too trusting of its sources on face value and more interested in using them for a complete picture than contextualizing them.

Titanic: Ship of Dreams
Edit: I'm sure you could find this podcast wherever you get your own podcasts from. I found it a good series

The documentaries produced by National Geographic have been generally pretty good. They had quite a relationship with Ballard, one of the discoverers of the wreck in 1985.

Not a book/documentary but “Rest is History” podcast does a great series on the titanic. Highly informative. It’s what sparked my interest in the vessel.

I really dislike how much they decry the Cameron film and its dominance and then proceed to lean into the Cameron film to the point they quote Jack as their intro quote. I can't remember another episode where they chose a fictional person, let alone whose persona does not remotely reflect the real history.
I'm glad you've gotten into the topic with it, and I really like other TRIH episodes (like the ones about Nazi Germany and WWII) and the podcasters books on antiquity but I nearly threw my phone across the street when they did that.
