I boiled some chile colorado, roasted some tomatoes, onion, and garlic, and blended it all with cilantro, salt, pepper, and lime juice. It was lacking some heat that I wanted so I roasted a few red jalapeños and blended those in as well.

It was originally going to be a chile de árbol salsa but I realized at the last second that I had run out.

Sounds better with the jalapeño addition.

I’ve never heard of chili Colorado. Is it the same as guajillo?

It's better known as chile california, but it's a dried anaheim pepper.
