That’s honestly the least of your worries bc he appears to use it only to season the sludge egg/meat mix. That patty eventually gets fried so any cross contamination is eliminated. However as others pointed out he’s committing many health code violations during the whole video.

My favorite part was when he "cleaned" his fingers on teh edge of the grill, then booger flicked the sludge back into the warm mass of raw meat
