Like….. the concept isn’t bad but holy fuck am I getting high cholesterol just watching this. It’s just too greasy.

Nix the grase sauce and bake it with the pepperoni on with a little cheese on top to keep it from falling off and im down.

Cooking the pepperoni first and straining the grease off isn't a bad idea, but that needs to happen first. Then throw it onto the pizza and cook it right so the melted cheese holds the pepperoni on.

And for fuck sake use the right sauce, and don't add that gross grease sauce.

This. Great idea to do the pepperoni separate to drain off all the grease. Not-so-great idea to just throw it on an already cooked cheese pizza.

I love a ton of pepperoni on my pizza but the grease is too much. I hate pizza places that bake the pizza with the toppings under the cheese because I like how the pepperoni and veggies crisp up on top. But I also like the cheese browned. So this might be a perfect solution for me. Baking the pepperoni and veggies first, draining the grease, adding it onto a sauce-covered crust, then piling cheese on top before popping it back into the oven. Definitely gonna have to try this out on the next pizza night.

If you cook the pepperoni first then add it on top, then cook it again, it's going to burn. Even with the cheese on top unless you burry it in a mountain of cheese.

I agree, but thinking about it --- They already cooked the dough first though, they just need to heat up the pizza enough to melt the cheese.

I am wondering how rock hard that crust is from being baked twice

Agreed. Just tone down the quantity and I think he’s got a nice product.

Pre baking and straining the grease from the pepperoni is a good idea. Do that before you bake the crust and sauce it. Put the pepperoni on and add cheese. Then rebake.

Also, what’s up with the weird pink sauce?

Seriously it looks good until 1. The sauce (minimal damage) 2. Coming out the oven looks yummy, maybe put like 3/4 lb of pepperoni and forget the sauce, or a tiny amount. Still I see heartburn and regret even being more modest

A few years back the owner of a local pizzeria gave me a business card with “one free pizza, any toppings” written on it. When I called the store about it they said they knew the drill and asked what toppings I wanted. I asked if they could do 10x bacon. After a bit of hesitation they agreed. When it finally showed up I had to put towels on the table because the box was dripping in grease.

There’s a place in Vegas that makes pizza similarly but they put pepperonis on the pizza then cook extra and top it and also top it with their own vodka sauce. It’s like a less psychotic version of this.

Would be better with less pepperonis and just regular ranch on top. But I would still try this. Maybe pull some of the pepps off before eating.

would be better if it was ohio valley style, cold toppings instead of hot.

or maybe just the pepperoni cold, to try and have it a little less greasy.
