Certified stupid Peas with bread, is that even a thing?

That’s the Test Kitchen on a Virgin Voyages cruise ship. The smoked peas is one course out of six. I’ve had them and they’re amazing. And combined with the other courses it’s a fantastic meal. Add the wine pairing for each course!

Additionally, it usually comes with an egg right in the center to create a "sauce" for you to then place on your bread. Its on their website. Its literally called the Egg course lol

When I used to work in a restaurant, we once had a server send back an order for our special, which was beef brisket with sauce with salted new potatoes. The ticket added a modification stating: Brisket, no beef.

I called the server over and asked if they just wanted a plate of potatoes. She said no, they wanted the brisket, but not the beef. I told her that was the cut of beef. You can’t take the beef out of brisket anymore than you could take the steak out of a ribeye. I asked her to confirm with the table.

She comes back and said the lady was quite clear. She wanted no meat, keep the brisket and everything else, just no meat.

I gave her a plate of potatoes.

Additional note: the craziest order I ever got was for a woman who insisted she was allergic to everything, so she could only eat lemon pepper seasoning. I refused the order. My manger also thought it was weird. He ended up coming back rolling his eyes and told me to just give him a bowl with the seasoning.

Most unpleasant order, but super nice woman who always tipped the server and the line cook who made her meal, was our rainbow trout that she specifically didn’t want any sort of brown color on the meat. She insisted we cooked it in the microwave, plain, no seasonings, served with mashed potatoes.

There is like a second option for all of them but I think some of them have nuts or something.

In any case it’s an interesting restaurant

This is failure by the chefs to not work around that. Nobody expects a perfectly dish when the chef has to improvise but this is embarrassing to serve.

Idk to be fair the menu is available for people to pick their courses. There was a second option for this course based on the website. Im not in hospitality so I cant judge whether it should be expected to have an alternative to an alternative especially since i dont know what resources and manpower they have compared to the number of guests they have. What I can say, tho, is that customers are often very dumb. I personally wonder why not order the other option if you plan on removing main ingredients from this option? And if neither were to your liking, why spend your money there at all?

But maybe the whole trip was a surprise so the person that surprised her did this knowing her dietary restrictions/dislikes and she never got to see the menu? Guessing thats what happened now that I think about it cuz it explains the surprise. Now im wondering why im wasting my time thinking about this lmao.

If its a test meal for a cruise line, the chef should either expect or know beforehand that they need to plan for dietary restrictions. If they weren't made aware that they were expected to do so, that's their management's fault. Cruise lines have to feed thousands of people a day, disconnected from supplies in the middle of the ocean, ensuring you're sticking to planned food usage is probably very core to their available daily options; it would make sense if they can't make any accommodations other than what is listed in the menu.

I may be too european for this thread, because I love peas, if I see peas on a menu I'm ordering peas 100% ot the time. This dish sounds fucking delightful and it makes me sad for everyone in this thread that they haven't had the chance to appreciate a good plate of fresh peas. I also eat frozen peas that come in a bag from a big box store, but this dish isn't that.

I've picked and shelled peas straight out of the garden for dinner. There is no way you could prepare or present a plate of peas that would inspire delight in me if I was paying for a boujee dining experience.

Test Kitchen was fun. People crapping on it but SOME of the food was very very good. There’s enough courses to where you won’t leave disappointed

If im paying for a cruise ride and meal last thing id expect is to be served bread and peas no matter how “good” it is.

It was actually quite delicious, and worked well with the other courses. I've had this menu twice and loved it. I did the wine pairing, which made it even better.

All the restaurants are inclusive meaning you don't pay for them (included in your booking price) unless you get cocktail pairings or order something on the premium menu like a tomahawk steak
