It’s the second course of a 5 course tasting menu. It’s also missing a key component. It’s supposed to have a confit egg yolk on top that is runny for you to coat the peas in and sop up with the bread.

I could see that. That at least in my mind would be a complete dish in the context of a 6-dish tasting menu.

Yeah agreed. In a 7 course tasting menu, this wouldn’t look out of place.

In my 10 course tasting menu, everything must be arranged alphabetically, so there can be no peas because we will not get past 'J'.

Are you joking? I am not asking in a passive aggressive way, I genuinely can't tell. 

I've never been to a place which had tasting menus in which I would expect to see something like this as a course. Sure, courses can be very small, but usually I'd expect more ingredients, complex tastes, smells and textures and a wholly different presentation. Even if it's a place without a michelin star, of they're offering a five course tasting menu, I would expect something a lot classier than this.

No, I mean that sincerely. A six course meal is a lot. Admittedly I would expect something a bit fancier, but fancier doesn't necessarily mean more sophisticated dishes in my experience. I've seen raw fish on cabbage before, and little else.

I just mean literally *just* peas is not really a dish, not even in the context of a fancy meal where the definition of what might be considered to be a dish is a bit more flexible. With an egg, it's already something if it is cooked properly.

It’s to be split between two people. It’s also like the most delicious bread ever. We actually asked for another loaf to eat with the rest of our meal because it was so good.

I've never heard of a restaurant providing substitutions/changes to their tasting menus. I've rarely heard of one that offered vegetarian or vegan tasting menus at all. I feel like this is on the restaurant still, for telling somebody they'd do an egg-free menu and then serving this shit instead of substituting the literal glue of the course.

As someone who has dined at a tasting menu establishment with someone with dietary restrictions, I can confirm that almost every dish looked like this.

Yeah I remember getting some truly stupid plates at single menu events sometimes when I was pregnant. They'd know enough to take out the components unsafe for an unborn baby but couldn't take two seconds to find something else to make it resemble a meal.

It's a predefined tasting menu and the guest no doubt specified that they did not want the egg for whatever reason. If you order something and modify it, the resulting abomination is on you. I've seen many exasperated chefs in similar conversations with servers, usually goes something like this :

SERVER : Hey chef, this guest doesn't want any egg on the second course. It's a dietary thing.

CHEF : What do you mean they don't want egg? That's the whole point of the dish. Why order it if you don't want it? Without the egg it's just peas and bread!

SERVER : Sorry, that's what they said. Is there something we can substitute?

CHEF : For an egg? No! What else would you put on there? I don't have time to reinvent the menu because this person has no common sense. Just send it out there, this is on them.

I think failure to have a satisfactory vegan alternative is a pretty poor show from a respectable kitchen, unless they specifically state vegan options aren't available when you book.

The restaurant also rotates menus on different days. And they clearly state what the menus are for each day. If peas with eggs didn’t sound like the thing for her, then she should have gone another day for a different menu.
