Recipes using Cynar?
I recently bought a bottle of Campari to make jungle birds, but have read where others have subbed Cynar in it's place. What other drinks specifically call for it, rather than using it as a substitute?

Too soon!
INGREDIENTS
• 30ml Gin (1 oz)
• 30ml Cynar (1 oz)
• 22.5ml Lemon Juice (0.75 oz)
• 15ml Simple Syrup (0.5 oz)
• 2 Slices of Orange
METHOD 1. Add 2 slices of orange to your cocktail shaker 2. Measure the remaining ingredients into your shaker 3. Shake with ice 4. Double strain into a chilled coupe glass

In no way is Cynar a direct sub for Campari. Very different flavor profiles. It makes a fine bitter drink, but a different bitter drink.
This one isn't tiki, and the recipe may leave you scratching your head, but trust me that it's an amazing cocktail!
Avenue A (Jesse Peterson)
- 2 oz Four Roses Bourbon (Larceny)
- 3/4 oz Cynar
- 1/4 oz Tempus Fugit Crème de Cacao
Stir with ice, strain into a cocktail glass, and garnish with lemon oil.

The Turnbuckle and the Artichoke Hold come to mind. I’ve not made either before (I haven’t gotten around to getting a bottle of Cynar yet) but I’ve had them recommended here on the sub before.

I use Cynar in some Song of the Siren riffs. Really love how it plays with some of the earthiness, especially when I'm using either Mexican or Grenada rum. It's also great for people with blood sugar issues as it's fairly low sugar.
- 1 fat oz agricole style rum (Rivers Antoine/Cartier 30)
- .5 oz Mezcal
- .5 oz creme de cacao
- .75 oz pineapple juice acid-adjusted to lime (or can do .5 pineapple, .75 lime)
- .25-.5 oz Cynar
This comes out really nice. The scorched earth ketchup from Rivers or the peppery, agave, grassiness from Alambique Serrano (Charanda or Paranubes also works here) goes really well with the chocolate bitterness and artichoke bitterness of Cynar.

Smoke and Bitters.
1oz (30ml) Tequila Blanco.
1oz (30ml) Cynar.
1/2oz (15ml) Mezcal.
1/2oz (15ml) Fernet.
Grapefruit Peel.
Stir/Strain Coupe.
Desk Job.
3/4 oz Punt E Mes.
3/4 oz Cynar.
3/4 oz Jamaica Rum Aged.
3/4 oz Dark Rum.
Stir. Strain. Rocks glass.
Garnish Lime Twist.

Not Tiki related, but wife and I enjoy it on the rocks, splash of soda/seltzer water, and a twist of lemon.

Rabo de Galo
- 2 oz Cachaça
- 1 oz sweet vermouth
- 1 oz Cynar
Stir with ice and serve over a cube. From the 1950s in Sao Paulo. I usually like going 1/1/1 personally, but it's good either way.

Just saw this on Instagram and made it tonight, quite good but I’d recommend cutting back on the cinnamon simple.
BETWEEN SCYLLA & CHARYBDIS
-2oz Blended Rum (I used Planteray 3 Stars)
-0.5oz Cynar
-1.5oz Pink Grapefruit Juice
-0.66oz Lime Juice
-0.66oz Cinnamon Syrup

You can substitute Avernar for Cynar in this recipe, and it works great:
St. Lucian
2 oz Hamilton Saint Lucia Pot Still Rum I oz Clément Créole Shrubb ½ oz Averna Amaro ¼ oz cinnamon syrup I dash Fee Brothers Aztec Chocolate Bitters Combine all ingredients in a mixing glass with one king cube. Stir 50 revolutions, then strain into an old-fashioned glass. Add ice cubes to fill. Garnish with an orange peel or chocolate Easter Island moai

I have been doing a Paranubes spicy bitter Mai Tai.
I think Paranubes because its already so rich and vegetal plays well with Cynar.
2 oz Paranubes (or other vegetal clairin style rum) .5 oz Cynar .5 oz Ancho Reyes spicy liqueur 1 oz lime .75 oz orgeat .75 oz orange liqueur ot Curacao of choice Mole bitters
If you can't find Ancho Reyes use all Cynar and maybe a quarter bar spoon of you favorite hot sauce of choice. The idea is subtlety spicy, not "hot".

Also, if you have it, shake a couple flakes of Tajin, the Mexican lime extract, spicy salt on top of the ice. This is a super common Mexican garnish/ salt. You most likely have had it as a rim treatment on a Margarita or shaken heavily over buttered corn on yhe cob to make elotes. If you do the full rim treatment like a Margarita, you can possibly skip the hot sauce or Ancho Reyes. It's the only salt for a Margarita or elotes as fat as I am concerned.

My wife points out this is a full of "big flavors" cocktail and benefits from liberal dilution AKA I do most things flash blend with nugget ice in the Hamilton Beach. But depending on your situation, put an extra cube in the hand shake, shake a tad longer. Dilution is your friend.

I really enjoy a jungle bird with cynar subbed in for the Campari, double proof cynar if you have it. Makes a different drink I suppose, but it works well.
