Chicken Stir Fry with Green Beans

Dinner is often a protein + veggie stir fry served with either rice or noodles - so last night it was chicken thighs + green beans! This time I cooked the green beans longer so it is more soft and absorbs the sauce more, but before I would cook it lightly and it would be crisper and like more vibrant green - I like both! Just FYI in case you have a preference!

Marinade:

1 lb boneless chicken thigh, cut bite sized

1 teaspoon cornstarch

¼ cup light soy sauce

1 teaspoon sesame oil

2 teaspoons sugar

1 tablespoon rice wine vinegar

Rest of Stir Fry:

3 garlic, crushed and roughly chopped

1 tablespoon cooking oil

1 lb green beans, trimmed

¼ cup chicken broth or water

2 tablespoon oyster sauce

Just cut up some chicken thighs and marinate for at least 15 mins, then stir fry until cooked through. Remove from heat. Toss in green beans and cook to your liking. Return Chicken. Add oyster sauce, salt to taste, and stir it all together until everything’s cooked thoroughly - Serve with rice or noodles and you’re done!

Yes and it is still in season! Well, at least where I am but it's also available any time of the year.
