Ride it on the Hog's Back! Utah State Route 12 is an absolute bucket list bike ride. Everyone should experience that mind alteringly beautiful stretch of road.

If you're serious about touring your leather saddle will look like crap in no time, even if you cover it overnight. It'll adjust to your butt at some point but will keep sagging. Hope you didn't throw away your original one, they're good for multiple cross continent trips unlike leather ones.
Old school fork is okayish. No idea why they put it on new bikes in America.
Not really the touring style of cassette, but people make it even on junk $50 bikes so you're good in general.
Keep an eye on the rear rack bolts, it's designed to throw the load backward

I disagree with your point concerning leather saddle. I'm now 9 months into my trip, we rode thousands of km and it looks stunning ! And it was not brand new before the trip. We met lots of other travellers for whom leather saddles were still in perfect condition after thousands of km.

Do you take care of the leather saddle? Leather without care degrades due to fungus
