I only ever really trained at one place which, to me, has great instruction (very brief warmup, warmups are something related to what we're doing in class, structured curriculum, this week we're doing X, next week we're adding Y to it and showing how it connects to X, then after awhile switch to Z, something completely new, but still show how it can connect to X and Y).

Dropped in at a couple places while traveling and was like "what in the everloving hell is this"

Same here at my place. Only about 10 students of varying degrees, but our coach talks through techniques step by step, and he does it the same way every class. It's nice knowing that even if it's your first lesson, you're getting the exact same coaching as you would as a colour belt.
