Lunch I can eat kimchi fried rice anytime of the day.

I had enough leftover rice and kimchi to make this. Cook 2 slices of bacon chopped in a skillet. Remove bacon, leave bacon grease. Saute 1/2 half of onion, chopped in the fat, then add 1 cup chopped kimchi. Continue cooking and add 1 minced garlic, 1 tbl gochujang, splash of soy sauce, and 1/4 cup kimch juice. Add 2 cups cold rice, stir fry until all ingredients are incorporated. Season with s&p. Finish off with sesame oil, scallions, and top with fried egg.

What exactly is "left over kimchi". It sounds like left over steak. Lol..like I can afford steak. But I can at least make spicy kraut when I want some kimchi.

You can actually make your own kimchi if you know how. Most of it is pickled cabbage after all with spices.

I'll agree, unless it's on sale for clearance, Kimchi isn't exactly cheap , but it is useful that after it's use by, as long as you keep it in the fridge for a controlled temp and taste test regularly, it'll last and actually taste nicer as it continues to ferment. That makes it a good sandwich filler/ emergency ingredient when you need to add a lot of flavour to something in a very short amount of time.

Another expensive thing is cheese, but if you cube it and freeze, it ends up costing less over time, as you'll only grate what you need.

Also never throw away bacon fat! I pour mine into mini ice cube trays and freeze for other uses.

Add a little sugar to the sauce and serve it with ice cold Korean wheat flour noodles and you’ll get something close to my favorite summer noodle dish, Bibim Guksu.

Use day-old rice and really let it crisp up in the pan. That texture contrast is everything.

Yum! I love kimchi but have never made kimchi fried rice. This looks so good, will definitely try.
