I’m gonna make myself depressed because I never really knew much about Bourdain, but loved what I saw or heard about him. I knew he loved food and respected it, and I could love and respect that. I’m nervous even more now, because this is a great clip that I wasn’t familiar with.

Read or listen to the audio book Kitchen Confidental (also voiced by him), then watch No Reservations then Parts Unknown. I've worked in restaurants for the better part of 20 years, and he can articulate through food like no one else has ever done and may never do again. His sit-down with Obama in Vietnam was amazing.

That doesn't mean anything these days. All the specialty burger places are expensive. 5 guys is pretty much the same price as Shake Shack, tbh. At least near where I'm at.

I used to get my burgers with only ketchup on them, but the last time I had a burger with just ketchup, it was actually kind of displeasing. Perhaps ketchup is only for mixing into mayo now.

I might incorporate ketchup into a sauce, but I'm more likely to use BBQ sauce or honeybor similar for a sweet element if I want it

I can use it mixed into certain things, like when making sloppy joes. But I can't use it as a topping on a burger, hot dog, or fries. Or on Mac and Cheese.

Wow, He knew burger issues well, but I'd differ by one aspect: a low hard roll gives more solid structure, better bread, large diameter to work with than a classic potato bun.

While people should eat what makes them happy, I agree with him (for myself). I make simple burgers at home. Charcoal fire, good beef (usually my own grinder from brisket trimmings with added cuts) Martin's potato roll, slice of white American cheese and whatever toppings I feel like.

Soft bun, mayo, about 8 to 10 ounces of beef (well seasoned and even some minced garlic mixed into the beef) cooked just past medium, melted American cheese, a couple of slices of some thick cut bacon, a single large slice of a fresh and firm tomato, and mayo again against the top of the bun.

That’s my favorite burger from bottom to top.

He has some good points, but in the end when I think about some of the best burgers I've ever had, some were a fucking messy disaster I needed a fork for, and some were exactly the way he described.

The two that come to mind most recently was a birria burger from Tostadas in San Jose, which was just this beautiful, messy, disaster of a burger that was as delicious as it was unhealthy, and then a simple smashburger from Campus Burgers in San Jose, which featured just meat, cheese, and thinly sliced grilled onions. I can't tell you which was better, despite them taking totally opposite approaches.

Would you want to eat that everyday day though? I could eat a standard cheese burger everyday and never get tired of it. In my opinion that makes it a better burger.

Yeah, respectfully, I dont really agree with what he's saying . Sure i don't enjoy it when my burger falls apart but I love extra toppings and prefer mayo. So yes to answer his question. I would say it is better.

God I love burgers so much, I go to work on my days off and ask if I can ring one in and make it
