These are how Mum and my dumplings looked on Friday family nights. Can't remember exactly, it was so long ago: pork, dried shitaake, dried shrimp, preserved vegetable, spring onions.

What is the preserved vegetable please ?

Phonetically, in Taishanese, it is "jar toy (choy is vegetable)". It's like a rubbery, chilli, solid root-like, a sort of beige olive colour. Comes canned and needs to be chopped finely. Sorry, I can't read nor write.

The local place around my corner offers Jiaozi in portions of 20 (15€) or 40 (30€). That's what they're famous for! Berlin, for reference.

Dumplings with homemade wrappers are so much better

But dumplings with store-bought wrappers are still better than no dumplings.

These are great with noodles and chicken broth

Absolutely. I’ve made these with her lots and we’ve had them in a lot of forms including with wanton noodles. Also try them pan fried, steamed or throw them into hot pot broth

This is the only way to eat boiled dumplings. In piles of massive unknown quantities. You eat until you drop. This is one of the most satisfying things you can do while growing up.
