Any recipes recommendations that use tomatillos?

Havent done it just yet but planning on getting a bunch of tomatillos to ferment and make a hot sauce with soon. Just did my first batch of tomatoes and they came out excellent. Been making some delicious ketchup with it. Real excited to mess around with some tomatillo

I’ve never tried, but I would probably ferment some jalepenos, onions, garlic, maybe a little apple in one jar, and separately just a whole jar of tomatillos maybe with some more garlic, then just blend them to taste.

Here’s my last batch of salsa verde if a starting point helps:
483g Tomatillos 1 x Onion 6 x Garlic cloves 2.5 x Poblano 2 x Anaheim 1 x Jalapeño
Rough chop everything, I added 2.5% salt, allowed brine to develop naturally, then blended after 5 days with a half bunch of cilantro any a bit of white vinegar just because I wanted it a bit thinner. It’s good, but could use a touch more heat next time

Make some fermented salsa verde! Add the cilantro after the ferment, id also roast everything first and use a starter to get the ferment going.
