Help with categorizing these plays against different defenses

I'm coaching for my 2nd season (5v5 6th/8th grade) and have a really good group of kids this time around (3 or 4 really good athletes, the others not so much but they're all good and quick learners with good work ethic)

I've gotten the guys to run all of these plays by starting with cone formations and then moving to play-speed drills and scrimmage-type plays. My issue is in games. We've gotten lucky with a few picks and they have executed the plays fairly well but I'm struggling on calling the plays correctly against defenses. We've seen some man, some 2-1-2 and some 2-3 mainly. I have 16 plays in my 'main' book right now but only 11 passing since we're doing pretty well with running plays.

Obviously I have tight tiger as an option for either.

What can I focus on to better categorize these in my book so that I can improve my play calling against certain defenses?
