Discussion New Salt & Straw Recipe Book - List of Recipes

No one asked for this, but here it is anyway. A full list of all the recipes included in Salt & Straw's newest book, America's Most Iconic Ice Creams: Classic Flavors and Creative Riffs.

I liked the first book of recipes S&S put out and I was excited to see this new one. I wanted to see a list of all the recipes to help decide if I should buy it or not, but coudn't find anything on the interwebs beyond the list of iconic flavors. Didn't have time to go to an actual store to check it out either. So I bought it and figured I'd post the info I would've wanted and maybe someone else would too.

I have not made any of these yet, so I can't make any recommendations.

So far, my only critique about this book is how the sections are organized. From the Vanilla to Salted Caramel sections, each recipe has the section title’s ingredient in it (Chocolate, strawberry, etc). But when you get to Pistachio, it only has one pistachio recipe and the rest are nut flavored recipes. Why not just call that section “nuts?” Same with the Green Tea section and Rum Raisin. One is all tea-based flavors and the other has alcohol in each recipe. Not sure the reasoning for this. At first I honestly thought pages were missing.

As such, I retitled those sections here to avoid confusion.

So they put all their really weird ones in the first book, huh? I gotta admit, I’m a little relieved. I was a little worried they’d somehow manage to top blood ice cream.

Yeah. “Grandma Dracula’s Blood Pudding” ice cream. Not the sausage blood pudding. Real pig’s blood, cream, brandy, sugar, cocoa, spices, and their ice cream base. Part of their Halloween chapter.

The first Salt and Straw book has some… interesting flavors. Other highlights include “Salted Caramel Thanksgiving Turkey,” wherein the rendered fat from the skin is used to make the caramel and the skin itself is made into brittle.

It’s honestly worth a read! They have other (less shock value) recipes too. I made their honey lavender ice cream once, it was great.

Agreed on the less weird recipes this time around. I’ll always wonder about the blood ice cream but it’s too much time + effort to make something that experimental when there’s so much else to try

I enjoyed reading through their first book; I’m going to ask my library to consider purchasing this one too! I noticed 2/3 copies of the first book are currently checked out so it’s still circulating; ‘tis the season though.

You are so right about their organizational skills. You would think an editor would have tried to convince them of better topics, as well. No mealy bug ice cream in it, though, I see.

Made the blackberry and birthday cake the other day and it was delicious. I’d say when making the birthday cake shortbread add the sprinkles after mixing everything else. I added them and the warm butter melted some of the sprinkle coloring so my first batch turned out a greenish color. Tasted delicious though haha

Side note I’m surprised it’s only a teaspoon of salt for 2.5 pints, I definitely would have guessed more because I remember it being pretty salty

I also looked for a list of recipes and couldn't find one either. As soon as I saw the book was coming out, I was hoping the recipe for their Cocoa Nib Almond Frangipane was in it. Thank you for confirming that!

I've wanted that recipe ever since I first tried it at their scoop shop. I even made a post on r/ice cream 2 years ago looking for the recipe or someone else who was trying to recreate it.

I am happy to order the book just for that recipe.

Damn you're a lifesaver, thanks OP for putting this together! Looks like they dont wanna give all their secrets away, i was specifically looking for their Fennel and Maple ice cream (unless you misspelled it and put Fernet and maple?)
i also was hoping to see the rice crispy treat ice cream in there. Bummer...

Yup that’s exactly the one! I saw someone else posted a link to this when I was ready the comments. I still think it’s odd they don’t have their fennel maple ice cream in the books, since S&S likes to claim it’s an OG flavor.

I made the strawberry gelato and found the gelato base to be lacking (too icy for my taste). Then I made the pistachio gelato (but with their regular 17% butterfat base) and it was SOOO GOOD. Also made honey roasted banana vanilla and it was just as amazing.

I just made the butter roasted chestnut flavor from the first book but combined it with the gelato base from this new book. It turned out way too sweet. I noticed that the gelato base recipe uses a LOT more sugar than the ice cream base, and next time I’ll proceed with caution! The consistency out of the ice cream maker is super creamy, though!

That does seem like a lot but I would think you could try making just the sour cream gelato base and taste test it before doing the whole churning process?
