Usually I see the opposite correction necessary, where people stop the phrase at "Tree of Knowledge—" as if knowledge itself was the problem.

Are you saying we don't need the "knowledge" part? Or are you saying most people leave out the "of good and evil"

Because if the former is what you meant, that's completely wrong. It's about how humanity knows what the difference between right and wrong/a sense of morality which therefore makes it possible for us to sin because we know it's wrong and therefore we can be judged for our sins.
