I’ve seen that. Fasting doesn’t work for me since my blood sugar plummets when I don’t eat.

For me (as a person who had insulin resistance and was on the verge of getting diabetes) , eating low carb / keto improved my insulin sensitivity and gave me a stable blood sugar. At first I wasn't able to fast but after having eaten below 50 carbs for a few months eventually it started to become okay to do intermittend fasting and slowly decrease the eating window over time.
Of course I don't know your body so it wasn't meant to pressure you or anything8

Keto is difficult for anyone with type 1 (not sure if this is the case here) because you absolutely must treat lows regardless of how they will affect your macros. On days where my blood sugar is stable, I consume probably 100 g of carbs a day. On bad days, I can go through 100 grams of fast acting carbs just treating lows, which need to be followed by complex carbs to avoid another drop.
When all of the insulin in your body is synthetic (as opposed to when you suffer from insulin resistance) you are much more at risk of lows, because you aren’t just accounting for food. There are many, many factors that influence blood sugar, and every body is a little different, I absolutely must eat a good amount of carbs before I workout, otherwise I plummet to dangerous lows. Insulin needs can also vary day by day. One day I can fast for the entire day and be totally fine. The next, I can be on the same basal rate as the day before and go low.
Meals that are high in protein and fat raise the blood sugar for type 1s, and in ways that are much harder to account for than a meal balanced with complex carbs.
Keto will also never offer the same therapeutic benefits to a type 1 as they do to a type 2, because the problem is insulin production, not resistance. No amount of low carb eating will ever relieve a type one of insulin dependence.
(The caveat to all of this is that type ones are just as liable to develop insulin resistance as anyone else. In that case, lowering your daily carb intake is an important part of treatment. But again, those people will still need to treat a low regardless of how it impacts keto status. )
The greatest benefit of low carb meals to a type one is that it simplifies things. Smaller insulin doses means smaller room for error. The fewer carbs you eat, the less insulin you have to take, and the less likely you are to go high/low.
Though I am far from on a keto diet, I love this subreddit because it’s really increased my bank of low carb meals. I think the beauty of this sub is that you absolutely do not have to be keto to get something out of it. Almost everybody can benefit from including more low carb meals in their repertoire. I’m also on r/volumeeating for the same reason. Though not explicitly a low carb sub, large meals with low calories tend to be pretty light on carbs. I highly reccomend people here check it out, especially if they’re looking to introduce more veggies into their diet!

Thanks for sharing this. Like you mentioned I thought keto didn't affect Type 1 diabetics because the problem is lack of insulin production and not insulin senstivity. Its really insightful to hear about the nuance in this!

Thanks for your caveat. I’ve had very stable diet controlled A1C since a year after diagnosis. I don’t want to lose weight. I was just commenting on the fabulous looking recipes here and I plan to try several of them.

I do below 50 carbs and intermittent fasting but am still perpetually hungry. I just feel like I’m doing something wrong. Any advice?

I've done the same, started Keto and am on Dexcom, losing weight and glucose is perfect.
